United Polaris Business Class on the Boeing 787, Sydney to Los Angeles
Travellers who last boarded a United Dreamliner out of Sydney in the 'BusinessFirst' era will remember a 2-2-2 layout, where window seats came with a climb over a neighbour. That product is gone. What flies the Sydney – Los Angeles route now is Polaris: a staggered 1-2-1 cabin where every seat reaches the aisle directly, wrapped in a service standard United has visibly worked on.
The commercial backdrop matters as much as the cabin. Since United and Virgin Australia struck their partnership in 2022, Velocity Frequent Flyer members have been able to book United flights with Velocity Points, at reward rates broadly mirroring what Velocity charges for Virgin Australia flights of comparable length. United also does not levy carrier charges on these redemptions, so the cash component is confined to genuine airport and government taxes — an unusually clean outcome for a trans-Pacific Business Class seat.
Check-in, lounges and boarding
Online check-in is worth doing as early as you can on this aircraft, because the front-row window seats go quickly. At Sydney Airport, United operates a dedicated Polaris check-in line separate from the 'Premier' lane used by most flyers with fast-track privileges. The only other passengers joining that queue are Premier 1K members and those holding Global Services status, so it moves fast.
From there, Business Class passengers can use the departures entrance at the far left of the terminal, which has its own channel for Business and First Class through immigration and security. A United Polaris ticket out of Sydney then includes a choice of two Star Alliance lounges: the Air New Zealand lounge, or the Business Class section of the Singapore Airlines SilverKris Lounge. Both sit close to the United gates.
One limitation is worth knowing: lounge access on a Polaris ticket does not extend to guesting in a companion travelling on an unrelated airline, and the reverse applies too. Boarding itself is orderly, with Polaris passengers in group one.
The Polaris seat on the Boeing 787
The staggered 1-2-1 arrangement means a seat sitting hard against the windows in one row is set closer to the aisle in the next. The difference is real: a true window seat enjoys two windows in upright mode and three when reclined, while the alternating row gets very little outlook. Seat 1L is the standout — a window position in the first row, with a large shelf ahead of it that is useful for parking a cabin bag while you retrieve or stow things.
There is no privacy door, which is the obvious point of difference against some competitors on the route. Even so, the cabin feels enclosed: once everyone is seated, you cannot see another passenger's face from your own. The fit-out includes mood lighting, a well-placed surface for a drink or a snack, a small side closet above it and easily reached power.

The Dreamliner's electrochromic windows earn their keep. Rather than the binary open-or-closed of a conventional shade, they can be set to a medium dim — enough to keep looking outside without flooding the cabin with light. That is a 787 feature rather than a United one, but it is a real advantage over older aircraft on the same route.
The persistent criticism is wear. Some seats show peeling trim, particularly around the edge of the literature pocket. It does not affect function, but on a cabin presented as a flagship it stands out. Set against that, the bed is comfortable enough to deliver a full night's sleep across the roughly 14-hour flight — which, on this route, is the metric that counts.
Food and drink
United's catering has been rebuilt to a reasonable standard, though not without trims along the way: the post-departure 'wine flight' is no longer offered, for instance.
Service begins with Champagne before departure — Heidsieck Monopole Blue Top Brut, NV. Once airborne, warmed nuts arrive with the wine list. The Californian reds are the stronger end of that list, and a Sanford Estate Pinot Noir pairs unexpectedly well with the light starter. The token Australian red, a Penfolds Koonunga Hill Shiraz, is the weak link: a recognisable name, but the absolute entry level of that range, with plenty of room to step up without straying near the top of the portfolio.
Lunch opens with a mesclun salad of fennel, orange and cherry tomatoes, alongside a choice of prawns or buffalo mozzarella. The main course runs to four options: seared barramundi fillet, beef short ribs, grilled BBQ chicken thigh, or a chickpea and zucchini tagine. Pre-ordering online is normally possible, with a cut-off ahead of departure, but late bookings can still usually secure a first preference on board. Dessert is United's signature sundae service, assembled at the trolley to order, with apple crumble cake and a three-cheese plate as the alternatives.
Between meals, and breakfast
The mid-flight menu goes beyond the usual snacks and fruit. A roasted creamy tomato soup is on offer, as is a Vegemite cheese toasty — assembled in Australia, since the catering is loaded in Sydney. It arrives as a half sandwich and is a little dry, as toasted bread tends to be without an onboard toaster, but the Vegemite is applied at an Australian-appropriate rate rather than laid on thick.
Breakfast is a choice of two: a spinach, feta and rosemary frittata with potatoes, chicken sausages and herb-roasted tomato; or smashed avocado toast, served as components to assemble yourself. The portion is the shortcoming — an extra piece of bread would make it more substantial, particularly for passengers who slept through the mid-flight options. Coffee is filtered rather than espresso, as there is no espresso machine on this aircraft.
Service, entertainment and connectivity
The information screen shows time remaining and lays out the service plan for the flight, including the progression between meals and cabin lighting changes — useful if you have not flown the airline before. Smarter still is what happens at the end of a film: instead of returning you to the main menu, the system suggests titles short enough to start and finish before landing.
Wi-Fi is available, with IP-based messaging free of charge — WhatsApp, iMessage and Facebook Messenger all work without payment. Broader access is sold as short hourly passes or a full-flight pass, payable with United MileagePlus miles at a conversion of roughly one mile per US cent. That is a sensible use for a small orphaned balance.
Crew service is friendly and professional without being memorable. Interactions during meal service are pleasant but rarely develop further.
The verdict
Judged on the hard product, Polaris on the 787 gives little to argue with. The seat is spacious, the bed works, the aircraft is modern and the cabin is private despite the absence of doors. United is also now the only US carrier providing pyjamas in Business Class between Sydney and Los Angeles — Delta does not offer them, and American Airlines withdrew them.
Food and drink are respectable with room for improvement: a more generous breakfast and a better Australian red would both lift the experience. Cabin wear is the other blemish. But on a trans-Pacific crossing, sleep is the point, and this product delivers it — with the added attraction, for Australian points collectors, of Velocity availability at rates mirroring domestic-length redemptions and no carrier charges attached.
