Upcoming course list: what we run, and what each course actually produces
This page is the upcoming course list. For dates, times and prices use the course search or the upcoming course schedule; for full course descriptions use the course catalogue; for a month view, the calendar.
What this page adds is the part the schedule cannot show you: which national training product each of our short courses sits on, and which units of competency are inside it. If you are choosing a course to satisfy an employer or a regulator, that is the detail that decides whether it will do the job.
Our licensing-linked skill sets, with codes and contents
A skill set is a nationally defined cluster of units of competency. It is smaller than a qualification and it produces a VET statement of attainment, not a certificate of qualification. These are the SIT skill sets on our scope of registration that sit closest to occupational requirements.
| Code | Skill set | Units inside it |
|---|---|---|
| SITSS00071 | Responsible service of alcohol | SITHFAB021 Provide responsible service of alcohol |
| SITSS00069 | Food Safety Supervision Skill Set | SITXFSA005 Use hygienic practices for food safety; SITXFSA006 Participate in safe food handling practices |
| SITSS00068 | Food Handling Skill Set | SITXFSA005 Use hygienic practices for food safety |
| SITSS00080 | Espresso Machine Operation | SITHFAB025 Prepare and serve espresso coffee; SITXCCS014 Provide service to customers; SITXFIN007 Process financial transactions; SITXFSA005 Use hygienic practices for food safety |
| SITSS00070 | Hospitality Compliance Skill Set | — |
| SITSS00066 | Kitchen Management Skill Set | — |
| SITSS00075 | Beverage Advice | — |
| SITSS00094 | Sommelier | — |
| SITSS00092 | Event Coordination | — |
Five things that table tells you that a price list does not.
Food Safety Supervision is two units; Food Handling is one. SITSS00069 contains both SITXFSA005 and SITXFSA006; SITSS00068 contains SITXFSA005 only. That is the real difference between the supervisor credential and the handler credential, and it is why they are different lengths and different prices. If a food business needs a nominated Food Safety Supervisor, the one-unit skill set does not cover it.
SITXFSA005 appears in three of them. Use hygienic practices for food safety sits inside Food Handling, Food Safety Supervision and Espresso Machine Operation. If you already hold it, say so — a unit you have already been awarded is a candidate for credit transfer into the next skill set rather than something to sit again.
Espresso Machine Operation is more than coffee. SITSS00080 bundles the espresso unit with customer service, processing financial transactions and food safety hygiene — effectively the whole counter role rather than the machine alone.
RSA is a single unit. SITSS00071 contains SITHFAB021 and nothing else. That is worth knowing because it sets a realistic expectation of the course length, and because it is the same unit that sits as a core unit inside SIT30722 Certificate III in Hospitality (Restaurant Front of House).
These codes superseded earlier ones, and were assessed as equivalent. SITSS00071 superseded SITSS00055, SITSS00069 superseded SITSS00051, SITSS00068 superseded SITSS00050 and SITSS00080 superseded SITSS00048, each recorded as equivalent as at 9 June 2022. So an older statement of attainment against one of those superseded codes is in a much better position for credit transfer than one against a code recorded as not equivalent.
The qualifications, for when a skill set is not enough
Alongside the short courses we are registered to deliver and assess full AQF qualifications, which run on their own intakes rather than on the short-course schedule:
| Code | Qualification |
|---|---|
| SIT20322 | Certificate II in Hospitality |
| SIT20421 | Certificate II in Cookery |
| SIT30622 | Certificate III in Hospitality |
| SIT30722 | Certificate III in Hospitality (Restaurant Front of House) |
| SIT30821 | Certificate III in Commercial Cookery |
| SIT40422 | Certificate IV in Hospitality |
| SIT40521 | Certificate IV in Kitchen Management |
| SIT50322 | Diploma of Event Management |
| SIT50422 | Diploma of Hospitality Management |
| BSB40520 | Certificate IV in Leadership and Management |
Our scope of registration extends beyond this list, including business and community services qualifications that we do not actively market. For the authoritative and complete position — every qualification, skill set and unit, whether each is current, and the extent at which we hold it — check training.gov.au under RTO 3722. That record is updated independently of this website and it is the one to rely on.
Skill set or qualification: which to book
| If you need | Book |
|---|---|
| A specific licensing credential now, for a specific job | The relevant skill set. Shortest route, lowest cost |
| To be employable across a venue rather than at one station | A Certificate II or III |
| To supervise | SIT40422 Certificate IV in Hospitality, or SIT40521 for kitchens |
| To manage a venue or a function business | A diploma |
| To stack short courses towards something larger later | A skill set, then ask about credit transfer at the point of enrolling in the qualification |
That last row is the one people miss. A statement of attainment against a unit is evidence of prior completion, and credit transfer recognises it, so short courses are not a dead end — provided you keep the paperwork. See downloading certificates.
Licensing: the certificate is not the licence
The skill sets above are nationally defined. The occupational requirements they sit behind are not: requirements for alcohol service and for food safety supervision are set by state and territory regulators, and they differ. Three things vary and all three need checking against the state you will actually work in:
- Which credential is accepted.
- Whether it expires. The AQF record does not expire; a licence or regulatory requirement built on top of the unit may, and some jurisdictions require refresher training.
- Whether the delivery mode is accepted. Some regulators restrict online or self-paced delivery for licensing purposes.
One more: in Victoria, Liquor Control Victoria treats the RSA statement of attainment and its own RSA certificate as two distinct records. Keep both.
Our RSA pages are organised by jurisdiction for this reason: RSA, Melbourne, Victoria, Sydney, Brisbane, Queensland, Perth, online. Food safety sits at food safety supervisor, food handling and virtual food handling SITXFSA005.
A note on this page
At the source address this page also carries a live feed of our Google reviews. Review content belongs to the people who wrote it and to the platform that hosts it, so it is not reproduced here. If you want to read what students say about us, the reviews are on our Google listing, and our own case studies are at success stories.
Questions and answers
What is a skill set?
A nationally defined cluster of one or more units of competency, smaller than a qualification. Completing one produces a VET statement of attainment listing the units, not a qualification certificate. It is recorded against your Unique Student Identifier and appears on your national VET transcript.
What is the difference between Food Handling and Food Safety Supervision?
Units. SITSS00068 Food Handling Skill Set contains SITXFSA005 Use hygienic practices for food safety. SITSS00069 Food Safety Supervision Skill Set contains SITXFSA005 and SITXFSA006 Participate in safe food handling practices. If a food business must nominate a Food Safety Supervisor, the single-unit Food Handling skill set does not cover that role.
I already have SITXFSA005. Do I have to do it again?
Not necessarily. SITXFSA005 sits inside Food Handling, Food Safety Supervision and Espresso Machine Operation, so if you have already been awarded it, raise credit transfer at enrolment. The evidence is your AQF certification documentation or an authenticated VET transcript.
What units are in the RSA skill set?
One: SITHFAB021 Provide responsible service of alcohol. SITSS00071 contains that unit and nothing else.
Is the espresso skill set just the coffee machine?
No. SITSS00080 Espresso Machine Operation contains SITHFAB025 Prepare and serve espresso coffee, SITXCCS014 Provide service to customers, SITXFIN007 Process financial transactions and SITXFSA005 Use hygienic practices for food safety. It covers the counter role, not only the machine. Note that SITHFAB025 carries a prerequisite, so sequence matters.
My old certificate has a different skill set code on it. Is it worthless?
Almost certainly not. SITSS00071 superseded SITSS00055, SITSS00069 superseded SITSS00051, SITSS00068 superseded SITSS00050 and SITSS00080 superseded SITSS00048 — each recorded as equivalent as at 9 June 2022. An equivalent supersession is the good case for credit transfer. Bring the document.
Does my statement of attainment expire?
The AQF record does not. A licence or regulatory requirement built on it may — some jurisdictions require refresher training or a current certificate for alcohol service or food safety. Check the requirement for the state you work in.
Will a short course count towards a qualification later?
Yes, if it was accredited. A statement of attainment against a unit is evidence of prior completion of a training product, which is what credit transfer recognises. A non-accredited short course produces no statement of attainment and so cannot be credited. Ask which you are booking.
Do I need a USI for a skill set?
Yes. Under section 53 of the Student Identifiers Act 2014 we cannot issue a VET statement of attainment unless you have been assigned a student identifier. It is free — see USI.
Which skill sets does CHT actually hold?
The table above lists our licensing-linked SIT skill sets. Our scope holds more than those, across several training packages, many of which we do not market. For the complete current list, check training.gov.au under RTO 3722.
Where do I find dates and prices?
The course search filters by course, date range or course ID; the upcoming course schedule is the results view with Start and Cost; the calendar gives a month view. Advertised prices are indicative — the written fee information for your own enrolment is what binds.
Can I get a short course subsidised?
Sometimes, and the cap is real: subsidised skill-set commencements are limited to two per calendar year and the limit counts commencements rather than completions. If you are planning several short courses in one year, read funded enrolment first and tell us the whole plan.
Why are there no reviews on this page?
At the source address the page carries a live feed of our Google reviews. That content belongs to its authors and to the platform hosting it, so it is not reproduced here. Our Google listing has the reviews; our own case studies are at success stories.
I want to train a team rather than book seats. Where do I start?
Workplace training. Cohort and workplace delivery is arranged differently from booking individual places, and an apprenticeship or traineeship pathway may be relevant.
How do I verify any of this independently?
training.gov.au, RTO 3722, for our registration, registration period and full scope of registration, including every code above and whether it is current. training.gov.au also carries the national record for each skill set and unit code. For international students, cricos.education.gov.au under provider code 04242E.

Skill set and qualification codes, titles, unit contents and supersession and equivalence records above are drawn from the SIT Tourism, Travel and Hospitality Training Package and the national register. Certification and student identifier requirements are drawn from the Compliance Requirements for NVR Registered Training Organisations (F2025L00355) and the Student Identifiers Act 2014. Our scope of registration is wider than the courses listed here and changes over time — training.gov.au under RTO 3722 is the authoritative record. Licensing requirements for alcohol service and food safety are set by state and territory regulators and differ by jurisdiction and sometimes by delivery mode. What does this page add that the schedule does not?
Which national training product each short course sits on, and which units of competency are inside it. If you are choosing a course to satisfy an employer or a regulator, that is the detail that decides whether it will do the job.
What is a skill set, and what does it produce?
A nationally defined cluster of units of competency, smaller than a qualification. It produces a VET statement of attainment, not a certificate of qualification.
What is the real difference between Food Safety Supervision and Food Handling?
The number of units. SITSS00069 Food Safety Supervision contains both SITXFSA005 Use hygienic practices for food safety and SITXFSA006 Participate in safe food handling practices. SITSS00068 Food Handling contains SITXFSA005 only. That is why they are different lengths and different prices, and if a food business needs a nominated Food Safety Supervisor, the one-unit skill set does not cover it.
Which unit appears in more than one skill set?
SITXFSA005 Use hygienic practices for food safety, which sits inside Food Handling, Food Safety Supervision and Espresso Machine Operation.
What should I do if I already hold SITXFSA005?
Say so. A unit you have already been awarded is a candidate for credit transfer into the next skill set rather than something to sit again.
Is Espresso Machine Operation just a coffee course?
No. SITSS00080 bundles the espresso unit SITHFAB025 with SITXCCS014 Provide service to customers, SITXFIN007 Process financial transactions and SITXFSA005 Use hygienic practices for food safety, so it is effectively the whole counter role rather than the machine alone.
How many units are in the RSA skill set?
One. SITSS00071 contains SITHFAB021 Provide responsible service of alcohol and nothing else. That sets a realistic expectation of the course length, and it is the same unit that sits as a core unit inside SIT30722 Certificate III in Hospitality (Restaurant Front of House).
Do these skill set codes have predecessors?
Yes, and they were assessed as equivalent. SITSS00071 superseded SITSS00055, SITSS00069 superseded SITSS00051, SITSS00068 superseded SITSS00050 and SITSS00080 superseded SITSS00048, each recorded as equivalent as at 9 June 2022.
Why does that equivalence matter?
Because an older statement of attainment against one of those superseded codes is in a much better position for credit transfer than one against a code not recorded as equivalent.
Which other skill sets are on scope?
SITSS00070 Hospitality Compliance, SITSS00066 Kitchen Management, SITSS00075 Beverage Advice, SITSS00094 Sommelier and SITSS00092 Event Coordination, alongside the four detailed above.
Where do I find dates, prices and descriptions?
Dates, times and prices are in the course search or the upcoming course schedule; full course descriptions are in the course catalogue; and the calendar (/calendar/) gives a month view.
